Fava season is has arrived in the Hudson Valley! A significant portion of yesterday evening was spent shelling, blanching, and skinning several pounds of fava beans, and I can’t wait to buy more.
We shall eat favas until we are sick of them; the season is so short and they are worth all the effort involved.
I wonder if I can freeze them? I have purchased frozen favas; Rossi Deli used to carry them but I haven’t seen them for a few years. I wonder if it would be worth all the effort, or if fava beans are a treasure worth laboring over and savoring only for a short time each year.

Now, at last, I know what Fava beans are! We call them Broad beans.
And yes, they freeze well – blanch and skin first. And if you grow them, or can visit a pick-your- own place you can pick them really tiny and mange-tout! They should only be 2 or 3 inches long and you will not be a favoured customer (!) but they’re delicious done this way…
